Happy Memorial Day weekend everyone! As you fire up the grills and slap on the bar-b-que… we pray you all have a safe and great holiday! …In addition, as we approach a new season of summer, and get together with family and celebrate this great weekend, let’s all bow, give endless thanks, and remember! Remember all those in our military family that have fallen and are no longer with us. We are so thankful for you, and your sacrifice for our freedom and country. There are no words to express our appreciation and admiration of your bravery and we are forever grateful!!! The crosses that lie in rows paint a picture of pure patriotism. and we. love. you. all. Love and Blessings everyone!!!

Hello everyone! Happy Friday and cheers of cold lemonade. I remember growing up and pouring lemonade in the ice tray to make the best frozen lemonade slushy ever! 🙂 …We’ve got the window half open, to let in a constant breeze carrying dandelions and mixed with summer-like heat. The beautiful aroma of honeysuckle and flagrant flowers fill the room, and grace the kitchen table. Thankful for nature, and it’s beautiful seasons …. ahhh, summertime awaits. Guess what…. Another thing we are FOREVER grateful for is our brave military! It is Armed Forces week! We celebrate, with a heart of gratitude, and endless appreciation in your honor…. We are a nation, connected, and thankful for each and every one of the brave heroes and their families that serve in our great military, Thank you!!!!!

Skillet Apple Pie Recipe

Enjoy baking this apple pie in your cast iron pan! Since I (Kathy) was raised mostly in the south… Southern California that is… I love the authentic southern feeling of cooking in a cast iron skillet… since we now live in Sweet Home Alabama the beautiful! Enjoy baking and eating this absolutely delicious, picture-perfect apple pie!

Skillet Apple Pie

  • 2 lbs. Granny Smith apples
  • 2 lbs. Honey Crisp Apple (Or any sweet variety)
  • 1 tsp. ground cinnamon
  • ¾ cup granulated sugar
  • ½ cup butter
  • 1 cup firmly packed light brown sugar
  • 1(14.1-oz) package Pillsbury piecrusts
  • 1 egg white
  • 2 Tbsp. granulated sugar
  • Vanilla or butter-pecan ice cream (If desired)
  1. Pre-heat oven to 350. Peel apples, and cut into ½ inch thick wedges. Toss apples with cinnamon and ¾ cup granulated sugar.
  2. Melt butter in a 10-inch cast iron skillet over medium heat; add brown sugar, and cook, stirring constantly, 1 to 2 minutes or until sugar is dissolved. Remove from heat, and place 1 piecrust in skillet over brown sugar mixture. Spoon apple mixture over piecrust and top with remaining piecrust. Whisk egg white until foamy. Brush top of piecrust with egg white: sprinkle with 2 Tbsp. of granulated sugar. Cut 4 or 5 slits in top for steam to escape.
  3. Bake at 350 for 1 hour and 10 minutes or until golden brown and bubbly, shielding with aluminum foil during last 10 minutes to prevent excessive browning, if necessary. Cool on a wire rack 30 minutes before serving. Serve with vanilla or butter-pecan ice cream if desired! ENJOY!!!

There is something magic about this melted butter and brown sugar in the bottom of the skillet that finds it way into the apples as the pie bakes in the oven!


Welcome back and Happy Mother’s Day weekend everyone! The weather has brought us sunshine and warm days, just in time to celebrate this wonderful time! We want to wish everyone a beautiful and blessed Mother’s Day!! Yayyy… Every day, I am so thankful for the blessing of being a mom to four AMAZING kids!!! Also, my mamma is awesome. She has always loved and encouraged me. Her strength, shine, and character is a constant inspiration! …We would love to hear about your mom!!! Guess what y’all… it’s May. 🙂 …The summer heat is starting to sneak in, and the honeysuckle are elegantly lining the trees! You can hear the lawn mowers as they grace and surround sound the evenings. The smell of fresh cut lawns (mixed with honeysuckle) catch the wind and welcome this beautiful time of year. Time to pour some lemonade and sweet tea, or a fruit smoothie, welcome back! 🙂 …We have a lot to celebrate this month, and one of those significant events is that this is military appreciation month. Yay!!!  We want to celebrate, acknowledge, salute and honor our great military!!! Our hearts are full of gratitude and appreciation for their “gift of so bravely serving and sacrificing for our country.”


Throughout the small towns and streets that connect our great country, there is an illuminating strength and spirit that rings true in the heart of America, and it’s people. The glue that holds our wonderful nation together is that spirit and freedom. Freedom to dream, and achieve. Freedom to believe and worship. Freedom to pursue happiness. We are so thankful to the military for protecting our liberty!!!
